    PLUCKING THE TURKEY
    BY WALTON (1746-1813)
    Turkeys first appeared at Christmas
    festivities in 1524, but the feast was
    then so vast that the turkey was not a big
    enough bird to play the principal part.
    The great event was the entry of the
    boars head, carried in by the chief cook
    on a silver dish to the accompaniment of
    music. This ceremony is recorded at a
    royal banquet in 1170. Swans and pea-
    cocks were also standard dishes, and
    bustards were eaten until about 1800.
